My favorite part of a meal is what washes it down, this means a good drink definitely goes along way completing any meal. How about wishing for a good cocktail to wind up a good evening over very good conversations and cheers. Our current situation doesn’t allow us to party at the moment, no social visits anywhere. To make an evening memorable how about you try this simple yet amazing cocktail. My husband and I were trying to come up with a name as you know cocktails have very bourgeoisie names, and because we were having it in the house, locked down. We named it, Quarantine Moonshine. But for the sake of the blog, we stick to Raspberry Moonshine.
You need very simple ingredients for these, but the raspberry liquor is a must. If you don’t have it simply use fresh raspberries and sugar syrup.
Ingredients
- 200 g Pineapples chopped
- 2 key lime ( 1 squeezed)
- 250 ml Raspberry liquer
- 150 ml Vodka
- 250ml Sprite soda
- Mint leaves
- Chopped lime in rounds for garnishing
Instructions
Add the pineapples, squeezed lime juice and raspberry liqueur in a blender and blend to a very smooth concentrate.
Add this to a pitcher.
Pour in the Vodka, Sprite soda, taste.Add more sprite or Vodka as per how you would prefer it to be.
Add the chopped mint leaves and chopped lime.
Refrigerate and serve Cold over ice cubes or just as it is. Let this rest for about an hour before drinking so that flavors infuse well. The mint gives it a good fresh kick, and the lime juice a good tangy aftertaste.
To serve
Take a glass, rub the rim with lime, dip it in sugar, then pour the drink, place a lime at the rim. Add several straws and enjoy. I prefer using two thin ones.
Notes
If using fresh raspberries blend them prior with sugar syrup. Then add the pineapples and blend even further till smooth, then follow instructions as per recipe.
