Moist Yummy Banana Bread

I usually make banana breads out of necessity most of the times simply because you watch bananas almost getting over ripe at the kitchen counter and just because you also don’t like seeing the fruit flies feasting away, the immediate thought is usually to get “rid” of them, and how do you do that, make banana bread. The reason as to why this is usually a very easy decision to make is also because it doesn’t involve the usage of mixers. Just two bowls, one that would hold the dry ingredients and the other one  for the wet ingredients, a whisk and a spatula,  a few mixes and you are done, I always look forward to the lining of the baking sheet because I know that I am actually done. Banana breads come in different shapes, different flavors, you can add different things in them, from oats, chocolate chips, peanut butter, even Oreos, couple that with a good spice mix and the slice from that cake is pure bliss. I have seen a couple  of carrot banana breads, the most I have done is a berry chocolate banana bread where I used both dark chocolate chunks and raspberries, that was also super awesome. You can bake the bread in any type of baking tin, from the obvious bread tin, baking sheet to the bundt tin and they all come out perfectly.

Ingredients

  • 4 medium size very ripe bananas
  • 3 cups all purpose flour
  • 1/2 cup brown sugar
  • 3eggs
  • 3/4 cup vegetable oil/melted butter
  • 1 cup mala/ yoghurt
  • 3/4 tsps baking soda
  • 1.5 tsp baking powder
  • 2 tsps cinnamon
  • 1/8 tsp nutmeg
  • 1/2 tsp vanilla
  • Pinch salt
  • Nuts for sprinkling on top

Instructions

Take two bowls in one add all the dry ingredients ( salt, flour, baking p and baking s, cinnamon, nutmeg) combine using a whisk, sieve and set aside.

In another bowl add the eggs, sugar, mashed bananas, melted butter or oil, mala/yoghurt, vanilla  and mix well I also use the whisk,

Then I added the wet ingredients into the bowl with the dry ingredients folding gently using a spatula until just combined.

I prefer leaving my bananas a bit chunky such that I can actually taste them as I eat the bread.

To the fun part, if I am adding any additions to the bread like raisins, chocolate chips, Oreos, I add them here after tossing them in some flour to prevent them from sinking this is mostly for the chocolate chips and raisins.

Next prepare your pan, line with a parchment paper if you have to then pour in the batter. Since I did not want my nuts inside the bread,  I sprinkled them on top then I also cut a banana in half and place on top as it baked.

Bake for 50 minutes or more at 170degrees until  a tooth pick inserted comes out clean.

Enjoy this bread with tea, coffee, milk or munch it  on its own as it is as a snack.

Notes

Banana breads are perfect for any weather, you can make them eggless too. or even have pure chocolate banana bread, where in the flour you will add cocoa and chocolate chips. You can omit the sugar and replace with honey or just simply do away with it because the bananas are after all sugary.
