Egg muffin cups

  1. We are making egg muffin cups. More like egg muffins. A great meal for breakfast, brunch or basically for snacking. It’s very simple to make and most of the ingredients you already have in your pantry. Feel free to explore with other herbs, or spices that you have. You can use bacon, or omit the meats completely and have it all vegetarian. Enjoy and have fun as you prepare this

Ingredients

  • 4 large eggs
  • 2 slices brawn chopped in cubes
  • 1 large onion chopped in cubes
  • 1/4 tsp salt
  • 1/2 tsp chibundiro spice
  • 2 tbsp grated cheese
  • 1/3 cup heavy milk or cream
  • 1 large tomato chopped in big rounds
  •  

Instructions

Place all ingredients in a bowl except the tomatoes and cheese

Whisk well, prepare your muffin cups by spraying some oil or butter.

Pour in your egg mixture 3/4  full

Sprinkle the cheese in each of the muffin cups

Place the round tomatoes on top of each cup

bake at 180 degrees for about 30 minutes, serve along side a toast, pancakes with coffee or tea. Ideal for snacking as well.

 

Notes

Great healthy snack.ideal for breakfast or brunch.
